recipe to pineapple tarts


Today after 10yrs of no baking.... I'm back in action... yeah Yogi mother taught me how to make pineapple tarts....the recipe:

Yogi's mum pineapple tarts
Fillings:

1. Raw pineapple 11 Whole
2. 1kg of sugar

Method:

a. Slice the pineapple into strip
b. Grind pineapple in jucier
c. Strained it with a muslim bag. Squeezed out all juice.
d. Retained the pineapple Za only.
e. Mix in the 1kg of sugar and cooked it till it become a paste.
f. Set aside to cool.

Pastry
1. 1.5kg of plain flour
2. 907g of unsalted butter
3. 2 Ounce of hot water
4. 1/4 tsp of salt
5. 5 eggs

Method:
a. sleeve the flour
b. cut the butter into small little cubes and mixed into the flour
c. add the 1/4tsp of salt into the 2 ounce of h20. set aside to cool
d. beat the 5 eggs and add in the cool salt water.
e. use the egg beater to mixed the flour and butter. add in the beaten eggs slowly.
f. mixed till mixture don't stick to the side of bowl.
g. take out a portion of dough and roll it till 2cm thick with rolling pin. use the pineapple tart mould to cut out size.
h. scoop out ready made pineapple with a melon spoon and put on top of pastry.
i. pre heat oven and bake for 10mins 180 degrees.
j. ready to eat. yummy
